Mayonnaise for "Sunday" Salad

Ingredients

2  
yolks of eggs
2 tablespoons
vinegar
1 cup
clarified groundnut oil (olive oil)
1⁄2 teaspoon
mustard
3⁄8 teaspoons
salt
1⁄2 teaspoon
white (black pepper)

Instructions

Mayonnaise for "Sunday" Salad

1. Beat egg yolks and one tsp vinegar.
2. Add mustard, salt and pepper and mix well.
3. Drop oil one tsp at a time into the egg mixture beating constantly until 1/4 cup of oil is added. Then add in large quantities, beating thoroughly after each addition.
4. As the mixture thickens, add the remaining vinegar a little at a time. Keep Cool.
