An Ode To Hawaii

Hello beautiful people,


I am more than excited about this dinner.  Hawaii fed my soul like no other tropical island has done.  The teal water cleansed my spirit while the vibrant air filtered my soul. The diet of the locals still very strongly reflected the intense influence of colonialism. It was challenging to find authentic Hawaiian food but what was not difficult to find was the spirit of Hawaii and its roots.  I had the pleasure of attending a dinner while there that just broke my heart with its deep illustration of the love and reverance the Hawaiians have for the land, people and culture.


I've worked on this menu for some time now.  It may read as simple, yet it really is not and is still a work in progress.  This is my love letter to Hawaii and my very tiny way of thanking the island for bestowing such grace and strength upon me.


You do not want to miss this dinner...there are a few surprises to be enjoyed the night of as well ;) 


Sample Menu


Amuse of pineapple, cane sugar, ginger


Watermelon, Hawaiian red salt, lime, African bird pepper


Crudo, charmoula, avocado, beet, yogurt, fried shallot


Grand Aioli, salmon, scallop, poached summer vegetable


Coconut panna cotta, mango, toasted coconut
