Preserved lemons are a North African, Middle Eastern, and South East Asian tradition that will quickly become a secret ingredient enhancing your favorite dishes including grilled veggies, roasted chicken and fish, and more!
This workshop begins with a LECTURE on the history, nutritive value and simple technique of salt-preserving citrus. We will TASTE a variety of salt-preserved citrus including lemons, yuzu, limes and kumquats. Then students will get HANDS-ON and make their own salt-preserved meyer lemons to TAKE HOME.
