Join me in the kitchen for a culinary adventure as I share my secrets to cooking vibrant and sumptuous feasts with seasonal produce inspired by cuisine from Africa and beyond that you can easily recreate at home. From Moroccan to West African Feasts, enjoy passion on your plates as you learn to cook seasonal produce using African inspiration and spices to elevate your plant-based meals into spectacular feasts. This is a feast for all diets.
Classes take place in my kitchen in Little Chelsea, with two to four people joining us. We cook for approximately 2 hrs and sit to eat afterwards. The menu is enjoyed by all diets. Please specify dietary requirements and allergies when booking.
My cookery class is very hands-on, as we chop, peel and cook together. After cooking, you will sit to enjoy your meal. Minimum of 2 and maximum of 5 people in my location.

Included are welcome drinks, the use of aprons, all cooking equipment, ingredients and recipes of the day. You can also bring your favourite drinks. (BYOB)

Our cookery session will start with an introduction to Moroccan spices and we will create a traditional Ras-el-hanout spice mix.
Moroccan Harira soup with Chickpeas & Tomatoes
Zaalouk - Smokey Aubergine Dip served with a variety of fresh vegetables
Vegetable Shakshuka - Spiced tomato stew with Aubergines
A sumptuous summer tagine with seasonal vegetables using your own homemade spice blend
Carrot & Orange Salad with Mint & Orange blossom
Moroccan Couscous with lemon, herbs & pomegranate
For dessert, dates stuffed with almonds (nut free alternative available)
Moroccan Mint Tea to end your sumptuous supper
Sample West African Menu (you will cook up to 2 -3 dishes)
Learn to make your own suya spice blend, a peanut-based based nomadic spice blend.
Plantain Akara with chilli sauce - Spiced plantain fritters
Suya platter with Aubergine rolls, cauliflower steaks, and more seasonal vegetables
Groundnut chop - a colourful feast with groundnut stew and lots of varying toppings
Banana Akara with Spice Chocolate Sauce, using your own East African chai spice blend and West African Fairtrade Chocolate
Black eyed Bean Tart (Moin Moin)
Jollof rice or jollof quinoa with Seasonal Vegetables
Braised Kale with mixed peppers and scotch bonnets
Plantain Shakshouka - a marriage of West African & North African flavours
Yassa - A Senegalese staple with mustard and caramelised onions perfect with aubergines, chicken or fish
Recipes will be sent to you and the spice mix you make will be packed for you to cook your feasts at home. Please advise on dietary requirements. Please note that nuts are regularly used in my kitchen.
