Salt Fish Pie Serves 4-6 made with mashed yam or English potato. Salt fish is fish that has been preserved by salt. This technique or method is all about keeping fish for longer in hot weather or climates such as on the west coast of Africa. Salt-curing freshly caught fish is an age-old preservation method. Using sea salt as your curing medium before air-drying the fish.

<strong>Re-hydrating and de-salting before use.</strong> When the time comes to cook the fish you should soak it in water for a number of hours to take down the amount of salt absorbed and or change the water it has been soaked in. This is all about re-hydrating and de-salting before cooking then eating.

How to make Salt Fish Pie?

1. Boil 1 1/2 lbs. salt fish clean.
2. Flake. Butter a casserole dish and put layers of salt fish, sliced tomato, sliced onions, pepper and seasoning.
3. Chop 4 hard boiled eggs, scatter on top, add a tablespoon butter.
4. Throw over 1/2 cup milk.
5. Top with yam, or English potato, sweet potato or pumpkin and bake at 400° for 45 minutes.
