Shrimp Flan

Ingredients

6 ounces
shortcrust pastry
1⁄2 pound
fresh shrimp (1/2-3/4)
1 can
cream of shrimp soup (tin)
1 tablespoon
sherry
   
parsley for garnish (chopped)
1 ounce
flour and butter (for sauce)
1  
onion (chopped)
   
oil & bay leaf

Instructions

How to make Shrimp Flan?

Wash, shell and devein shrimp.
Boil some water in saucepan with a little oil, salt and pepper, onion and bay leaf until the onion is cooked, then add the prepared shrimp, and turn off the heat immediately, the shrimp will cook by itself; leave until cool.

Make the pastry, roll out and line an 8" flan dish, bake blind at 350° for 15-20 minutes. Drain the shrimp plus the onion, and reserve a little of the water. Make a sauce with the flour and butter and a little of the reserved water, then add the soup and a tablespoon of sherry; the sauce should be thick. Add the shrimps and onion, season and pour into flan case. Return to oven for a further 15-20 minutes or until sauce bubbles. Remove and cool; sprinkle with parsley. Can be served warm or cold.
