Instructions

Soak salt beef to remove most of the salt. If bacon is used instead, no prior soaking is needed. Cut salt beef or bacon into small pieces. Peel and slice onion. Peel eddoes, and place in saucepan. Cover with water. Add beef or bacon, onion, seasoning and black pepper. Boil until eddoes are soft, adding more water from time to time. Crush and mash eddoes, stirring to give the soup an even consistency. Add salt to taste. Cut up hot-dog sausages into chunks. Add to soup, and boil for 5 minutes more. This nourishing soup will serve 4.

Notes

1 tin of hot-dog sausages (14 oz.)
2-3 lbs. of eddoes
1/2 lb. of salted beef (failing which, 1/21b. bacon)
1 large onion pinch of salt pinch of seasoning pinch of black pepper
