How to make Chicken in beer?
1. Joint the chicken and toss in seasoned flour until well coated. Slice onions and mushrooms, fry these in butter in a large frying pan quickly so as not to overcook. Remove and reserve.
2. Fry the chicken pieces until brown, but not cooked, over a slow to medium heat, then pour in the beer, return the onion and reduce heat to simmer. Cook for a further 20 minutes so that the liquid is reduced by at least half. Add the mushrooms towards the end, then dish and serve. A little cream can be added just before serving.
3. If doing large quantities this can be done in the oven as a casserole after browning the chickens and baked at 350° for 40 minutes.
