By West Africa Cooks, 10 August, 2014
Description

Diced ripe plantain lightly spiced & deep fried served with roasted peanuts. Kelewele is a typical Ghanaian street food snack made by women on the roadside from sunset till late at the night in Ghana. When you walk along the streets at night you can usually pick up wafts of sweet frying plantains - follow your nose and your in for a treat. For 2 cedis (40p) you can buy a package of sweet salty hot plantain cubes wrapped into bundles bigger than your head! Here's how to make it at home.

Instructions

How to cook Kelewele?
1. Peel the skins off the plantains then chop them into small chunks, about 2cm wide.
2. Heat the oil in the deep fat fire to 160ºC or heat the oil in the pot if you are using a pot.
3. Place the chopped plantains into a mixing bowl and sprinkle on the ginger and chilli.
4. Leave to marinate for 3 minutes while the oil gets hot.
5. Drop one of the plantain chunks into the oil, if it sizzles immediately the oil is ready and you can carefully place the rest of the plantain into the hot oil.
6. Fry until the pieces become a nice toffee brown colour.
7. Remove from the oil and place onto kitchen towel to remove excess oil.
8. Pop open some beers or Supermalt and serve with friends :D
