I have a lot of Nigerian friends and not one of them has ever baked anything for me when I showed up at their door. So you can imagine my surprise when I found out that there exists an indigenous dry confectionery mix market in Nigeria! I was curious to find out more and also baffled at my own ignorance. I have always professed that African people don't really do the whole oven baking thing but that's a lie. It is because I don't know how to bake and find that it is easy to blame it on others. Perhaps my Nigerian friends bake for their children and chose to only cook Egusi Soup for me.

Muriel, former Home Economics Teacher, specialist in food and nutrition. Taught for 21 years at the Annie Walsh Memorial School. An examiner for many years for west African examination council (WAEC) in home Economics subjects.

Educated in Sierra Leone and Great Britain; has traveled extensively in Europe and America to gain more knowledge in cookery and to appreciate international cuisine.

Dr Pamela A.S Greene author of Favourite Sierra Leone Recipes is a Black Hero in the Hall of Fame.

Pam was a scientist nutritionist, home economist and free-lance consultant in health communication. She pursued a course in Nutrition at the University of London and returned to Sierra Leone in 1964 as Sierra Leone’s first trained nutritionist. She was appointed as the first head of the Home Economics Department at Njala University.
