* Exported from MasterCook * Alakpa Recipe By : Favourite Sierra Leone Recipes by Pamela Greene Serving Size : 8 Preparation Time :0:40 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pint palm oil 2 unit large fresh fish -- cut into large portions or dried fish in large flakes 4 unit jakato -- optional 2 unit large onions -- ground 2 unit peppers -- large red chopped finely unit ogiri -- optional 2 cup water 1/2 cup powdered egusi -- optional unit salt to taste 1 pound meat -- cooked to tender optional How to make Alakpa? 1. Put palmoil, water, ogiri, onions, pepper into a saucepan and simmer gently until onions are tender and mixture well blended. 2. Cut jakato into sections and add to the sauce (optional). 3. Add fish and egusi if desired and cook gently until fish is tender and sauce thickens; much of water having evaporated. 4. Serve with a carbohydrate dish or store for later use as palaver sauce base. - - - - - - - - - - - - - - - - - - NOTES : People differ in what they put into Alakpa an in their meaning of Alakpa.
