Eggplant Casserole recipe

Ingredients

2  
eggplants (2-3)
2 cups
canned tomatoes
2  
sweet peppers
   
onion
3 tablespoons
butter
3 tablespoons
flour
   
salt
1 tablespoon
brown sugar

Instructions

How to make Eggplant Casserole?

1 .Dice eggplants and cook for 10 minutes, drain.
2. Fry onions and sweet peppers. Add tomato, salt and sugar.
3. Mix flour with water and add until mixture thickens.
4. Add garlic, italian seasoning, eggplants and cook.
5. Put in a casserole dish and sprinkle with breadcrumbs and grated cheese.
